 Post subject: Sealed orders

Hope this isn't a daft question:

Captains often went to sea with ‘sealed orders’ and instructions to open them at a specific point or station.

Why was this done?

Where on the ship were the sealed orders kept? Were they in the possession of the captain who was on his honour not to open them?
